Hey guys! Happy Wednesday! How’s the week going? It is flying by for me, actually. I have a fun girls’ long weekend in Vermont coming up and its really keeping me going. :)
Anywho, you have to know about the What I Ate Wednesday movement. And, because I particularly enjoy reading all about what you guys ate on Wednesday, I thought I would play my part. Except… I want to show you what I wish I ate Wednesday.
You see, today was definitely a good food day (most days are for me, hehe), but it wasn’t an exceptional food day. Here’s what I wish I ate Wednesday:
Vanilla french toast topped with real maple syrup, coconut, bananas, cinnamon and chia seeds. So delicious and so satisfying.
Tempeh fajitas with black beans and salsa for lunch.
Homemade pizza for dinner.
And vegan fudgy brownies with some greek yogurt and cherries on top. Mmmmm….
What do you guys wish you ate Wednesday??

That all looks delicious! I ate pintos with steamed cabbage, tomatoes, cilantro, hot sauce (I know you're with me on that) and mini cornbread muffins for dinner. Really, that's what I wanted!
Ooh, what part of Vermont? I went to college in Burlington!
