Farm Stand Food

Hey guys! Remember me? Ahem, you know, Em? The lover of Emilydays, nanners, snot rockets and peeing in the woods, and yoga. Did that help? Did you laugh? I hope so.

Anywho, a whole heck of a lot has happened since I last posted. My brother Sam moved to Massachusetts (yay!); we celebrated the fourth of July with family, food and hiking; I went for the longest bike ride in my existence (not too long, but still something to celebrate!); I’ve spent lots of quality time with people I care about, I’ve rekindled a love affair with the show Ally McBeal after 14 years (it’s scary that I feel like I am her this time around)…

Phew. So, let’s move on, shall we? Perhaps to some food?

With my recent goal to get all of my produce from the Farm Stand, most of my meals have been huge, delicious, piles of veggies. Really, there is nothing better than fresh veggies. I picked up some spinach and my goodness, the texture and taste is worlds above the grocery store alternative. Truly!

Recently, I’ve been seasoning them super simply – with soy sauce, hot sauce, avocado, mustard, cheese, etc. I will add some form of protein (beans, tofu, edamame, tempeh, veggie burger) and a carbohydrate and am pleased as punch.

All of the veggies have really transcended into other meals, too. I find that I’ve been even craving them at breakfast (where did my sweet tooth go?). You know what that means? Delicious goat cheese and veggie omelets or veggie-filled egg scrambles with avocado. Oh yes.

I promise I’ll be back soon! I have plans to make a delicious dinner for my great friend Sarah and her husband Michael in their brand new, beautiful kitchen tomorrow. I’m planning to document. :)

You sound chipper! I love it! We have been eating a ton of veggie scrambles lately! Nothing better than fresh summer veggies mixed with eggs! YUM! Have fun cooking tomorrow! That sounds like fun!

I've been eating a lot of zucchini lately. No particular reason other than I want to use my spiralizer :)
