Lovin’ Leftovers

Hi guys. What’s the good word?  Here in New England – I’d say the good word is “relief.” We’re finally getting some cool, less humid air around these parts and its lovely.  I’m pretty pumped about it.

You know what I’m always pumped about? Leftovers – which is exactly what I had for breakfast. (Like that segue?) Frittata with a sandwich thin shmeared with almond butter.

Lunch was another spinach salad with cuc, carrots, bell pepper, tomater, tempeh, raisins, and blush wine dressing.

Snack was in two parts – a nectarine…

I took a nice, vigorous walk before work this morning and so I had the afternoon free to run some errands. It was nice to switch things up. By the time I got home, I was super hungry and got to work on some delicious dinner. I had a lot of veggies to use up before the long weekend and so I sauteed bell pepper, onion, and broccoli in the skillet and then added black beans and bbq sauce. I also made some brown rice to serve with it. I was pumped to use some cilantro from my little plants (thanks Mom!). It was delish – AND there are leftovers. :)

Summa Summa Summa Time

Hey guys! Happy Monday! I hope that you had a wonderful weekend. My best friend Melissa came to visit and we had a couple of days filled with summer fun. Saturday was spent outdoors getting a run and walks in. Before heading out Saturday night, I made a delicious dinner (toot toot) of scallops, roasted taters and broccoli.

The scallops were hands down my favorite part of the meal. I sauteed them for a bit in a warm pan and drained any scallopy juices off before adding two cloves of garlic and lemon juice. Once everything was sauteed and lovely, I added a good amount of Smart Balance and breadcrumbs.  Yum. Can’t wait to make these again. :)

Sunday we woke up fairly early to get to Hampton Beach for some fun in the sun. For beach fuel, I had some Kashi Go Lean cereal topped with plain yogurt, nanner, cinnamon, chia seeds and honey.

Even though we got rained out at the beach after a couple of hours, it was great to get there and be in the sun for a bit. We munched on Subway subs and then booked it home when it started pouring.

We had a lovely walk and dinner (post rainstorm) but I went camera-free. Melissa had Pad Thai and I had “Wakefield Noodles” which was so good! It was shrimp, pineapple, bell pepper, cucumber, onion and scallion in a tomato based sauce with whole wheat noodles on the side. Yum.

Fast forwarding to today – my day started out very similarly to yesterday – a yogurt bowl mess. I love the addition of chia seeds. These bowls keep me going all morning long.

Lunch was a spinach salad with cuc, bell pepper, carrot, tomater, tempeh and hummus. I topped it with some unpictured blush wine vinaigrette.

Lessert (lunch dessert) was a nectarine. I love nectarines. Enough said.

After work, I made my way to the gym. I conquered the stairclimber for 35 minutes of the fat burning interval workout. After the stairclimber, I hit the treadmill for a mini hill walk.  After a mile, I called it quits for the cardio, did some push-ups with my feet on the exercise ball. Man, those are tough.

Post workout, and despite the heat, I was super hungry. When I got home, I opened up my laptop and found this recipe for a delicious frittata by Iowa Girl Eats. I knew when I saw it that I would have to make it soon and today was the day!  I made a few changes because I only had a regular tater and I didn’t have any parmesan cheese or squash. I added a bit of skim milk to the eggs and also added half of a fresh sweet onion to the frittata. It was super simple, required only one pan and was delicious! I also have leftovers! Great job Iowa Girl. :)

I had half of my frittata with half of a whole wheat pita spread with Smart Balance.

I just finished a delicious dessert – chocolate vitatop with some chocolate peanut butter So Delicious soy ice cream on top. On a whim, I decided to pick some of the So Delicious up the other day and I have not been disappointed. Its quite tasty. :)

Walkin’ to the Weekend

Hey guys! Happy Friday! Happy weekend! It has been a gorgeous day here – I got my wish for less humid, less hot weather. Its lovely.

I started this lovely day out with some oats that I made last night with 1/2 cup oats, 1/2 cup water, 1/2 cup skim milk, lots of cinnamon and a bit of nutmeg. I heated them this morning in the nuker with a tiny bit of water and then added a nanner and some almond butter. Fantastic.

Lunch was a hummus, spinach, provolone and mustard sandwich with some bell pepper slices on the side.

Afternoon snack couldn’t come soon enough (Friday = bottomless pit day).  I had a bowl of greek yogurt with some whole grain cereal flakes and raspberries.

After work I bounded home to change so that I could meet a friend to take a walk around the lake. It was so nice out and great to have a girls’ hang out and talk session (plus a workout). :)

I was a Starvin’ Marvin after our walk and got right to dinner – sauteed bell pepper and onion, fresh arugula salad (spicy!), and a black bean veggie burger with an… easy over egg on top! I was really craving protein – weird, huh? – and thought, why not an egg on my veggie burger? It was delicious – especially with ketchup and mustard. Yum.

I just got back from another walk – this time to the grocery store to pick up some dessert. I got some chocolate vitatops and soy ice cream – peanut butter chocolate. They were a delicious combo, let me tell ya. Sorry for the lack of picture, it was spoon to face, lickity split. :)

Be My (Own) Guest

Hey guys! Happy Wednesday! I know that officially, its Guest Post Wednesday, but I figured that since I’ve been pretty sporadic these days, I probably could count as my own guest. :) Anywho, I hope that you are having a good week. Its been super humid and warm around these parts. I wish it would storm already so that we get some relief!

So, this morning, I dragged my butt out of bed this morning and met my pal Jillian. [Sidenote: Is anyone watching Losing it with Jillian? I love it! So good.] I decided that instead of doing the Last Chance Workout, I would get back to my Jillian roots and do 30 Day Shred Level 1. Man, is that hard. The combination moves are brutal. It was one of those mornings that I was still sweating after the shower. Sick.

Breakfast was cool and refreshing – multigrain cereal flakes topped with raspberries, nanner, skim milk, chia seeds and cinnamon.

Lunch was a treat but not very aesthetically pleasing – cottage cheese mixed with chick peas, garlic powder, black pepper and a bit of hot sauce with veggies (squash, onion, bell pepper and eggplant) coated in curry and sautéed until delicious.  They were leftovers from last night’s dinner.

Since tonight is a class night, I had to pack my dinner too. I feel like the queen of tupperware on these days. Yikes. I packed a spinach salad with beets, more chick peas, a boiled egg and blush wine dressing along with some hummus and the last of a bag of black bean tortilla chips.

Class went well – first night of Managerial Finance.  Not an English major’s dream, but our professor is great. He got me through Accounting with an A and hopefully this class will go just as well.

A Monday Promise

Hey guys! Happy Monday! I hope that you had a great weekend and a wonderful Father's Day. I had a nice time in New York with my family, as usual. My brother Sam got home safe and sound on Saturday night and we celebrated with burritos and refreshing beverages. Sunday, I was able to spend some time with my best friend and had a great Father's Day dinner with my family.

I made my way back to MA early this morning (verrry early this morning) and so I don't have pictures of breakfast. It was broken up into three parts during my 4 hour drive to work - nanner around 6, iced coffee with skim milk around 6:30, sandwich thin with pb, a few raisins and a couple of chocolate chips around 7:30.

Naturally, lunch was early and delicious - a salad from the salad bar with mixed greens, tomaters, carrots, cukes, cranberries, edamame, chick peas, feta, croutons, onion, hot sauce, vinegar and olive oil. Yum.



Snack this afternoon was another chocolatey treat - a Pure bar. These are my favorite.



I so appreciate the support you guys have shown and promise that I will be up and running to a more regular schedule soon. Have a great evening!

Adventures in Lawn Mowing

Hi friends, Happy Saturday. Before I get into it, I feel like I have a couple items of business to address.

1. I’m sorry for my disappearance. I have been having a bit of a rough go at it lately and I just haven’t had it in me to blog. I’m not really ready to talk about it, but I can assure you that I’m ok and the people that I love are ok. I’m sorry to be cryptic but I’m sure things will make themselves apparent over the next few months.

2. A big thank you to my brother Sam for his wonderful guest post. He wasn’t sure about what to write and definitely went above and beyond. If you haven’t had a chance to read it yet, definitely do. He gives a great perspective on how to live a healthy, fun college life. He works very hard and he is definitely an inspiration to me. 

And now, on to a bit of story telling with a side of food.  I’m currently staying with my parents for the weekend.  My parents are extremely busy people with self-driven at-home to-do lists that would make The President dizzy.  Currently, my Dad has a bum hip (old skiing accident) that he is actually having surgery for Monday (send good thoughts!).  My mom somehow hurt her neck/shoulder and so is a little bit limited as well.

Their to-do lists, however, cannot be stopped and so on my visits I have been doing my (small) part to help. As a rule, I have a European’s view of lawns – they are ridiculous ways to add more work to your life. While I consider myself a team player and someone who believes in an equal distribution of chores among the sexes, I somehow have managed to elude the task of lawn mowing my entire life.

To get a better idea of what this means, picture me inside a nicely air conditioned house watching Dawson’s Creek reruns (don’t hate) and sucking on a popsicle while my brother is outside sweating and heaving away on our parents’ enormously hilly yard.  Or, imagine me floating lazily in the pool with music blaring and bubble gum popping while my Dad, covered in grass, makes the rounds. It is miraculous that I was never called upon (or smacked)…

Imagine my hesitation when today, upon waking up, my mom told me that it was going to be hot and that I’d better get my work pants on and get mowing. Say what?

Not willing to disappoint and admittedly intrigued by the process, I headed out ready to show the grass who’s boss.  After a doctorate-level introduction to the vagaries of priming the engine, emptying the grass bags and perhaps most importantly, the pull start, I made my way to the steepest side hill to begin my task.

Perhaps it was the fear of tumbling downhill in a heap of freshly severed toes and lawn-mower parts, but I immediately broke a sweat and became shaky with adrenalin and power.  I made it through that side hill with nary a clipped toe-nail, emptied the bag, pull started the mower again, and made my way through the rest of the lawn.

About two hours later, I was finished and quite worried that the first hill had perhaps grown back already. While I can’t say that it was easy, it WAS a huge workout and I dare say that I have a new appreciation for neatly trimmed, luscious lawns.  So much so, that when I have my own place, I will not hesitate to pay the neighbor boy 20 dollars to mow it.

Needless to say, I was ready for FOOD after all that excitement. I made myself some delicious scrambled eggs with feta cheese and spinach.  Feta and eggs are my new favorite combination.  So good.  I topped them with some ketchup and hot sauce and had a toasted sandwich thin on the side. Yum.

Guest Post Wednesday: Challenges of Healthy College Living


Hello this is Emily’s younger brother Sam filling in today. I am entering my final year of school on a quest for a bachelor degree in Mechanical Engineering at Kettering University in Flint, MI. I am a member of Lambda Chi Alpha fraternity and do the typical college things as well as some atypical ones. My semesters are condensed into 11 weeks, and when I am not taking classes I have a full time co-op job. I have been doing this constant rotation since my first term. My co-op is with Fisher Price toys, where I work in research and development. I cannot hold a flame to my sister when it comes to being a fitness freak, however; I do try to maintain a semblance of a workout routine in my hectic schedule, despite that not always being the case.

I was a year round soccer player from kindergarten through high school which I have absolutely no regrets about, however; when the time came to stop the regular games, practices, camps, and training sessions I was not completely distraught. Needless to say I never had a problem being overweight in high school and was in fact very fit. When it all came to an end I ceased all activity all together, for no other reason than lack of motivation. I had participated in organized sports all my life up until that point and always had someone there to tell me when to work out or practice, so when it came time to do things on my own it was difficult. I fell into a lull of inactivity that lasted about 2 years.

I went through my first two years of college in the typical fashion, long nights, sleepy classes, crazy weekends; all fueled by energy drinks, fast food tacos, and BEER…lots of BEER. I entered school at an honest 180 pounds, and the freshman 15 ended up being more like the freshman 35! I peaked at a stout 215. At this point I attempted to get back into a routine but I found it hard to stick to and drinking only light beer wasn’t going to cut it. I wasn’t into it for the right reasons, and I didn’t stick with it.

It finally took a trip to the doctors for a physical and a 24 hour period with a heart monitor on to make me realize that I should take better care of myself. My youthful invincibility complex had been foiled and I knew it. I decided I was going to start working out and that it was going to be a fun no pressure affair. I have been consistently working out at least 4 days a week since my rebirth into the exercise world 9 months ago.

In the age of P90x and meatheads with their muscle milk and clipboards at the gym, I like to mix things up and keep it simple. I split my time between cardiovascular work and weight training. I usually do two days that are muscle intensive and two days that are cardio intensive in a week. This keeps me from getting bored, which can lead to flaky workouts. I also don't force my routine on myself. If I don't feel like working out one day, I don't.

A good example is my workout for a two day stretch last week:

Day 1 (I was working Arms this day)
  • Mile Warm Up 60-70%
  • Stretch
  • Standing Curls
  • Skull Crushers w/dumbells
  • 1 Hand Tricep Extension
  • Concentration Curls
  • 1 Arm Cable Tricep Pulls
  • Standing Hand Squeeze
  • Wrist Roller

Day 2 (Cardio Day)

  • Mile Warm Up 60-70%
  • Stretch
  • Stair Workout*
    5 sets both feet every step x2 ; 5 sets standard x2; 5 sets every other x2; 5 sets right foot x2; 5 sets left foot x2
  • Half Mile Cool Down 50%
  • Stretch

*The stairs should be at least 20 stairs and I prefer a set with a landing in between. The set I use for this workout is 28 total with two 14 stair sections and a landing in between.

I have seen a considerable improvement in my cardiovascular endurance and I have also netted some gains in the muscle area, I have increased my lifting weight on most of my exercises by 50-75% over the past 9 months. I have only lost an honest 5 pounds but I have definitely readjusted my fat and muscle percentages. I am not trying to lose much, I am 6’3” after all and, I am currently anywhere between 195 and 200lbs. It all depends on what our wonderful cook at the fraternity house made for dinner and what type of weekend I had, either a 5 beer one or a 20.

I feel that being active has really improved my life in more ways than being able to use the big plates in the weight room. Since I have started working out I have found I go to bed earlier, I have more energy during the day, it is easier to get up in the morning, I am more structured, and I am more productive and utilize my time better. The key for me is that working out should be fun, not a chore. If you are not having fun you need to find something that is otherwise you will never stick with it.

As you can imagine my diet is not spectacular when I am at school, I don’t have much control over what we eat with a house cook and 40 guys who get cranky without ample amounts of cholesterol and saturated fats. But I do have some simple rules that I follow to help, I don’t eat anything within two hours before bed, I always eat 3 meals and two snacks. I try to have as many fruits and vegetables as possible and limit drinking to 2 nights a week tops. While I am away from school at work I can control my diet much better and do eat pretty well. If only I could convince my peers that they can eat good tasting food that is also healthy.

Farmer’s Bounty

Hi friends! Happy Tuesday! I hope that you are well this fine evening. I’m a bit beat but super excited to have gotten tomorrow’s school work done so that the evening is now open for relaxing (and cheering on the Celtics, of course!).

Brian and I got a chance to go to the local farm stand yesterday and picked up some amazing veggies and fruit. We picked up asparagus, broccoli, beautiful curly bib lettuce, onions, strawberries, sweet taters and (non-local) bell peppers.  I also got some local honey and a tomato plant. With all of that fresh produce, it has been easy to create delicious and healthy meals. Today was no exception.

I started out with a decidedly non-local breakfast of a bagel thin with cinnamon vanilla sunflower seed butter and nanner. Quite tasty, regardless.

Lunch was a beautious salad featuring the fresh lettuce, raisins, a boiled egg, almonds, and tahini dressing.

My afternoon snack today was really dessert like.  The strawberries we picked up are incredibly delicious.  I had some in a cup of plain greek yogurt.

After taking Jillian and her Last Chance Workout on, I was more than ready for dinner. I baked a sweet tater, steamed some broccoli and sauteed some red pepper and onion to have alongside a very utilitarian veggie burger with mustard. I topped my tater with some hummus and salsa and called it a meal. It was super tasty and stopped my rumbling stomach, for sure.

I know a lot of times it sounds just like a ploy to encourage local shopping, but you really can taste the difference between say, local strawberries and those that are shipped to the country.  I’m amazed at how delicious and fresh everything tastes. Yay for that!

Well, I just finished another skinny cow ice cream cone (local from a cardboard box in my freezer) and am sipping on some tea. :) Time to go cheer on the Celtics!

Pina Coladas, Oh My

So...the plan was to do a special post with my mom and possibly a video about the amazing meal she planned for last night. BUT, when you're served homemade pina coladas before starting the dinner prep, things tend to go awry (as in dancing, joke telling, and inappropriate movie quote exclamations). Needless to say, there wasn't any video action but there were a few pictures.

The pina coladas were made by simply crushing some ice in the blender and then adding some fresh pineapple, lite coconut milk and rum. Mom garnished with a cherry and some pinapple on the rim.




My mom started by making some pesto using basil and parsley from her deck top garden, toasted walnuts, parmesan, lemon juice, olive oil, fresh garlic, salt and pepper.



My mom roasted some bell pepper and asparagus in the oven while cooking some shrimp and whole wheat penne pasta. After about 25 minutes, everything was done and it was time to mix it up. My mom saved some of the pasta water to loosten up the pesto.

The pampering continued this morning when I woke up to freshly made honey corn bread. I made an egg omelette with spinach and reduced fat feta to go along with my piece. It was an amazing way to start the day, for sure.



I've been lounging around this morning. Its a rainy grey day- the kind that is almost nice on a Sunday- but, I think I'm going to try and complete the Biggest Loser workout in a bit. First time since Roll-ageddon 2010. Wish me luck!

Family Time

Hi friends! What's the good word? I hope that you're having a wonderful weekend. I'm in Albany visiting my parents and am having a lovely time, as per usual. I arrived around 7:30 last night and was whisked away to a delicious meal at our favorite Indian restaurant. I ordered baingan bharta and some garlic naan. Yum. I was also served a vanilla ice cream cone once we got back. Its tough being here. :)

This morning, I rolled out of bed around 9 and came down to the delicious smell of coffee already made. Mmm... I also had a bowl of bran flakes cereal with a nanner, some raisins and skim milk.





Post some serious newspaper reading and contentious puzzle competitions, I got dressed and went out for a long walk. My war wounds are healing nicely and it felt good to get moving. I went to my favorite nearby park and perused the weekend farmers market. I was out for about an hour and a half.

I was soo hungry for lunch when I got back and made myself an egg salad sandwich with 1 boiled egg, some light mayo, brown mustard, curry powder and black pepper on a whole wheat sandwich thin along with spinach and tomato with an apple on the side. Hit the spot.



Snack this afternoon consisted of some prunes (yum) topped with crunchy pb. So tasty.



I ended up getting pulled into weeding and pool cleaning by my parents this afternoon and it actually felt good to get out there and do some physical labor. Its hottt out there though. I'm more than ready for a shower...grossss...

I think we're making a special meal this evening and I plan on documenting with my momma. I'll be back!

Rebounding

Before I get into my regularly scheduled posting, I just want to thank Adrien again for her guest post. I know that it couldn’t have been easy to write and put out there for the world to see and I think its so important that she did.

My day started off on the right foot with a glorious shower – first one in 6 days. Don’t worry, I was soaping up in the bath. (TMI?) Anywho, it felt amazing (with a side of sting). I’m really healing up and its making me quite happy. Breakfast was equally glorious – overnight oats with plain greek yogurt, oats, apricot jam, half a nanner, cinnamon and some naturally nutty cinnamon vanilla sunflower seed butter.

For lunch, I had a lovely date with my best coworker-friend Nan and a side of salad bar. I didn’t take a picture, but you guys have seen it numerous times. Mixed greens, cuc, carrots, beans, hummus, croutons… yum on a plate.

Snack was like dessert. Its been a while since I’ve had a Pure bar and it tasted delicious. Must pick up more. :)

After work, I made my way to the gym. It felt glorious to put some workout clothes and sneaks on. I did a hill walk on the treadmill and it felt soo good to break a sweat. It was Emilyday worthy, indeed.

By the time I got home I was a starvin’ marvin’. I made some sweet tater homefries on the stove – once they were nice and crispy, I added some bell pepper, spinach and an egg. I topped it all off with salsa, half an avocado and some hot sauce. Yum.

I’ve just been working on some school work and now its time to watch the Celtics. Woo hoo! I’m going to break into a bit of frozen yogurt and put my feet up.

Guest Post Wednesday: In her stories lies her survival.

Hi Everyone! Happy Wednesday. This week’s guest post is courtesy of Adrien from Confessions of a Health Nut. She opens up about her struggles in achieving the balanced, happy life that she now shares with us through her (awesome) blog. Adrien is an amazingly strong and lovely person and I'm very thankful to host her!

This story is on my blog; this story is edited down for simplicity, and for safety on my blog. But like the time I stepped out on a limb and asked for help, here I am once again stepping out and lending it the best way I know how.

It’s tattooed down my spine. It says everything and nothing all at the same time. This was the last quote of the first book I was able to read from start to finish after my spiral out of control.

I was always happy. I was always outgoing. I was never bullied and always liked. I played sports all through high school, and I succeeded. I was offered a scholarship at an NCAA school to go play field hockey, and I took it.

I was 17 when I left home, filled with dreams, and sure that I knew everything about the world and had few life lessons to learn. I thought I knew how to handle difficult situations, that I would be able to shake off whatever issue came my way. I thought I was strong, that was until I was stripped down to the point where I had no idea about who I was, with no idea of how to put myself back together again.

My story wasn’t about weight, or the media, it morphed to being about it at some point along the way, but it never started there. I never learned it was OK to have feelings. I was never encouraged to express what I was feeling, or to go deeper and look at why I was feeling that way. Often when I cried, I was told just to shake it off, or even worse, not to cry. Crying is not a bad thing, it’s how your body expresses itself, I never knew that (or believed that), and not being able to properly identify my feelings is exactly where my eating disorder stems from.

I was taken advantage of in my relationships at school. I had never had any large amount of attention from guys before, but with my cute Canadian accent and new blonde highlights, not to mention “fresh meat” stamped on my head, I was about to get some. There are several defining incidents that happened while at school- and I don’t want to get into the details, because it wasn’t the incident, it was how it was handled. I didn’t like what had happened to me, nor did I want to acknowledge it, I had no power, and no comprehension of how to deal with my feelings around it.

What I knew how to do in those moments was to run. I knew that if felt good to be in control of something. I knew that I needed to be disciplined, and I gained a wicked drive to be the best at my sport. After those events, I knew I had to be better, whatever I did was not good enough, there was always room for improvement, and before I knew it my entire focus had shifted. Practice for an hour and a half each day, training in the weight room for an hour, plus an hour long run, fed all on a bowl of green beans.

I was out of control, and unhappy. My friends all noticed a change in me, I knew the switch had been hit, but I wasn’t willing to admit it. I came home after a year and a half. I said I didn’t know what I wanted to do with my life, and instead of wasting my time I would figure it out. Not only did I not know what I wanted to do, I’d lost site of who I was. I came home angry, so angry. Not at anyone in particular.

What I didn’t know then, that I know now is that my anger was just the tip of the iceberg. I hadn’t felt real feelings about anything, including my grandma’s death (which were transferred into shitty relationship after shitty relationship)- I had just buried them with exercise and parties, and ignored them to the point I couldn’t identify feelings other then happy or angry, I was numb.

After coming home I started living my life in fast forward. I ran a marathon, I got a boyfriend, worked a five jobs at once; it still didn’t make me happy. I got to the point where I’d rather workout at the gym than hang out with a perfectly lovely man, who genuinely cared for me.

I then found myself backpacking a week after my marathon; a booze filled trip across Australia and Fiji. When I came home, I found my 5’9 frame standing not as tall as it once had weighing only 110 pounds. I knew I was sick. I also knew that I needed help, and I also knew that I was screwed.

I was lost, so lost, but also aware that I wouldn’t be the one to get myself out of this mess. I could no longer eat apples because I thought they’d make me fat, me trying to get better was having a third of a 240 calorie protein bar. There would be days where I’d consume nothing but sugar-free jell-o and pickles, and liters upon liters of water (probably close to 8 or 9 each day).

It wasn’t the magazines that had made me this way; it was simply a fear of getting fat that took over every cell in my body. Being as active as I’d been my whole life, I had missed an important piece of information; I never learned about proper nutrition and energy needs. After I got home from Australia, I ended up losing another 16lbs and found myself hospitalized for 3months.

Gaining that first pound was agony, it took me ten full months to gain enough weight to be at a healthy BMI and another 6months in intensive therapy to be somewhat ok being at that BMI. I had a lot of learning to do, I had to learn that there were layers to my feelings, I was never allowed to say in group therapy that I was happy or angry- I learned about the depth of human feelings and how important it is to recognize them when you feel them. By burying what had happened to me and running away from it all, I never fixed anything. I only damaged myself further.

Today, I’m at a healthy weight of 135lbs, and have been for a full year. My struggle was not an easy one to overcome. It’s still not an easy one to overcome, but each day I make the same choice to be kind to myself. There are way more important things that I want in my life than to simply “not be fat”. I want children, I want my university degree, I want normal relationships not tainted by an eating disorder. I want drinks on a patio for that matter with conversations that don’t revolve around calories and workouts we did or did not do. I want to live, and I’ve made that choice; each day I make that choice. Each time I talk about my eating disorder it gets easier to deal with. For so many years, I didn’t feel, and I didn’t even know it was ok to feel human, so for me, by being able to verbalize what had happened, and how I felt was huge. In my story, lies my survival.

Laying Low 2.0

Hey guys! Happy Tuesday! I hope that you had a good one.  I was able to work from home today which was really good for me. I still need to change the bandages on the back of my upper thigh regularly and its  just easier to be home and not worried about my clothes, etc. Anywho, I’m feeling much much better and I think I’m over the hump. :)

For breakfast, I made myself some oats with half a nanner, lots of cinnamon and nutmeg and some peanut butter for frosting.

Lunch was quite delish – a whole wheat pita stuffed with hummus, organic greens, sprouts, sundried tomatoes and hot sauce. I also had two pickles on the side. I’m going to say that I served it on the wooden cutting board for style purposes instead of because we don’t have any clean dishes and are out of dishwasher soap. :)

Snack was consumed later in the afternoon – a plain greek yogurt with some fresh raspberries, the other half of my breakfast nanner and cinnamon.

I was feeling so peppy this afternoon that I managed to make a delicious dinner. Tofu sauteed in bbq sauce, lime juice, hot sauce, pepper and fresh garlic along with black beans and sauteed pepper and onion.  I had mine over some more greens and topped with some fresh guac and salsa.

Brian and I set out after dinner in search of dish washer soap and ended up coming home with everything but (don’t you hate when that happens?) – including these delicious skinny cow chocolate ice cream cones.
