Hey guys! Happy weekend! I hope that you like this new format. I felt like it was time for a bit of a change and I think this works. Thanks, also, for the well wishes. I’m definitely feeling much better. I hate when my stomach is off, blech.
Anywho, its an absolutely beautiful fall day here. After a great night’s sleep, I got up and made an adventure of my morning coffee. I got up, got my walking gear on and set out to a coffee shop that is about 2.25 miles away. It was so nice to get moving and enjoy the quiet of morning. I grabbed my coffee and made my way back home, sipping the warm goodness all the way. It was great. I’m not going to lie though – I was more than ready for oats when I got back.
This just wasn’t any bowl of oatmeal, though. Oh no, these were pumpkin oats! Yep! I made the jump. I still don’t think I could eat sweet potato just yet, but the pumpkin was calling to me at the store and thus, I went for it.
This bowl was made with 1/2 cup oats, 1 cup water, 1/3 cup pumpkin, tons of cinnamon, nutmeg, clove, and 1/2 a nanner cooked in. Once all was cooked, I topped this bad boy with some peanut butter, the other half of my nanner and some honey. So good. :)
