Well hi! Happy Monday. I know, I know. Its Monday. Well, the work day is over and we’re well on our way to Tuesday. Yee-ha!
I started out my day with some baked banana oatmeal topped with crunchy peanut butter “frosting.” This is always so tasty and easy (once its made, all you do is heat it back up in the morning and dig in!). I do make some changes to the recipe – I mash half of the banana and add that to the batter. I also don’t add walnuts and only use about half of the brown sugar.
I had a busy morning. A bunch of us are moving and I actually got my very first office. It was exciting but a lot of work. I was super hungry for lunch and hit up the salad bar – hard.
My snack this afternoon was a hard boiled egg with some roasted garlic Heart to Heart Kashi crackers.
After work, I made my way to the gym to do a 35 minute hill walk on the treadmill. I was pretty beat from moving in the morning and so just wanted something to get my blood pumping and clear my head. It did the trick!
Dinner was a repeat from last week – whole wheat pasta, chick peas and sauce with a side of roasted broccoli. This is super satisfying, easy and cheap! I add a ton of red pepper flake to the sauce and its delicious.
I’m so looking forward to an early bedtime tonight oh, and this little treat that I picked up with a FoodBuzz Tastemaker coupon today…Activia Vanilla Bean dessert yogurt. I most definitely crumbled in a chocolate chocolate Newman-O. And it was most definitely delicious. The cup was kind of small, considering its 140 calories, but if my only complaint is that I wanted more – I’d consider it a victory.
Now, I’m off to watch some episodes of The Middle. Do you guys watch? Its so funny. I’m catching up on last season online. :)

I really need to make a batch of baked oatmeal this weekend to grab for quick breakfasts on the go. I used to bake things like that all the time... I need to start that up again!! Looks like a great way to start the day... also a great way to get back to eating bananas!!!!! :)

I love baked oatmeal! So easy and so good! Congrats on the office! That is great! I have seen a couple of episodes of The Middle, but haven't gone much further. I need to watch more! Have a great night Emily!
