Hi! How are ya? I hope that you had a wonderful weekend. Mine was OK – it was utilitarian so that I can have a blast next weekend in Atlanta. Still, I managed to get some fun in, including my trip to the movies last night to see Despicable Me. I really enjoyed it, and the 3D was awesome. Have any of you guys seen it yet? Next up is Toy Story III.
This morning, I woke up pretty early again. I dug it though – I’m definitely a morning person. I made myself a beauteous bowl of cereal with Kashi go lean, fresh blueberries, toasted cashews, cinnamon and skim milk.
After breakfast, I did some blog reading and digesting and made my way out for a walk around the lake. It was really hot today but the humidity was way down from yesterday so it was nice. I walked the 5.5 miles in about an hour and fifteen minutes and then proceeded to lie on the floor with the fan on me for about a half hour once I got home.
For lunch, I made myself a different but extremely tasty bowl. I mixed some couscous with organic tomato sauce and topped it with thinly sliced and sautéed zucchini and a sunny side up egg. It was so good. I think its going to be a repeat affair.
After an afternoon of school work, I was ready for a snack. I made myself some delicious banana soft serve with dark chocolate cocoa powder and some homemade pecan butter mixed in. I made the pecan butter this morning and it came out perfectly, if I may say so. I added ample amounts of honey, cinnamon and a bit of salt and just processed away. Yum. It tasted great in the soft serve.
After some more school work, it was time to stretch. I did the beginner yoga workout from exercise tv and loved it. It was perfect for a good stretch.
I finally showered around 5. Have I told you that I love days when you can just play all day and get as dirty as possible and then shower at night, preferably before nice dinner? Well I do. These kind of days are awesome.
For my nice, shower-worthy dinner, I made a summer feast. Corn on the cob, fresh salad with ‘mater, carrots, avocado and homemade vinaigrette, veg-head baked beans and a veggie dog. Yum.
Post dinner, I made my way out for ice cream. I actually treated myself to a kiddie cup of real (not light) peanut butter paradise ice cream, which, get this, had – peanut butter ice cream, reeses pieces, peanut butter cup and butterfinger in it. It sounds super heavy, but it was light and delicious without leaving me for want of more “chunk.” It was awesome and worth the splurge. :)
Alright friends, I think its time to relax before bed. Off to work tomorrow!
Have a great night.

Confession: I did not shower yesterday. By 6pm I figured why bother? I washed my face though.
I love showering at night! I rarely shower in the mornings unless I workout in the morning. But I am totally a morning person also... I am at my most productive at that time. But if you'd told my teenager self that I would have laughed at you!!
You always make such yummy and creative meals!! :)
Holy peanut butter heaven! That sounds amazing.
And I don't shower until night time most days. I just get all gross playing with the kiddo all day there isn't really a point. It is nice though because it is so refreshing before settling in for the night.
Emily,
This is my first comment although I must confess that I have enjoyed your blog for a bit. In fact, I recently referenced it in one of my own blog posts at http://www.thedeanfiles.com/2010/07/19/meeting-a-new-challenge/. I decided that a reference warranted an actual comment. Also, it turns out we have a mutual friend, Erin Dorney, who I am a huge fan of as well.
Thank you for all of your honest and accessible posts. I have used many of your own meal ideas for inspiration in my own home.
