Hey guys! Happy Tuesday! I hope that you had a good one. I was able to work from home today which was really good for me. I still need to change the bandages on the back of my upper thigh regularly and its just easier to be home and not worried about my clothes, etc. Anywho, I’m feeling much much better and I think I’m over the hump. :)
For breakfast, I made myself some oats with half a nanner, lots of cinnamon and nutmeg and some peanut butter for frosting.
Lunch was quite delish – a whole wheat pita stuffed with hummus, organic greens, sprouts, sundried tomatoes and hot sauce. I also had two pickles on the side. I’m going to say that I served it on the wooden cutting board for style purposes instead of because we don’t have any clean dishes and are out of dishwasher soap. :)
Snack was consumed later in the afternoon – a plain greek yogurt with some fresh raspberries, the other half of my breakfast nanner and cinnamon.
I was feeling so peppy this afternoon that I managed to make a delicious dinner. Tofu sauteed in bbq sauce, lime juice, hot sauce, pepper and fresh garlic along with black beans and sauteed pepper and onion. I had mine over some more greens and topped with some fresh guac and salsa.
Brian and I set out after dinner in search of dish washer soap and ended up coming home with everything but (don’t you hate when that happens?) – including these delicious skinny cow chocolate ice cream cones.

Glad you were able to take it easy at home today. We always do that same thing - go out for one thing and come back with everything but! ;) I've seen those skinny cow cones and wondered if I'd like them. I used to be obsessed with their ice cream sandwiches. They are really good!
