Hey guys! Happy Monday! I hope that you all are feeling refreshed and ready for a new week. I definitely enjoyed my weekend in Albany. I know I've said this before, but its always awesome to feel like I have no where to go, no where to be, and nothing I NEED to do. Its really nice. I also love being around my parents - they are hilarious and fun. If you're so inclined, feel free to leave comments about how they should just move to Massachusetts already. :)
I know that I have some catching up to do, but I think I'll just share yesterday's breakfast (because it was beautious) and then move on to today. Ok? Ok.
Remember how I told you about the baked goods from the cafe where we had lunch on Saturday? Well, we most definitely got some - my Mom and I picked out low fat cranberry nut muffins while my Dad enjoyed a fudgy brownie (all made with local eggs and organic ingredients!). I had half of my muffin heated with a scoop of vanilla ice cream on top on Saturday and saved the other half for this breakfast:
Scrambled eggs (1 egg 2 egg whites) with berries and half a muffin toasted with butter. It was awesome. I felt like I was eating a breakfast that could be featured on a commercial. All that was missing was a bowl of frosted flakes (kidding).
So, as promised, I'm going to fast forward to today. I think my run yesterday in the heat and humidity totally zapped my energy and my picture-taking abilities. Regardless, I'm feeling more alive this morning and even managed to get up early for some yoga with Rodney Yee. It felt GREAT to stretch. I'm feeling a bit sore and stiff from soccer "practice" on Saturday and my run yesterday and downward dog was such a nice relief.
I couldn't wait for breakfast - a yogurt mess with nanner and go lean crunch. Mmm...
Lunch was equally yummy - a whole wheat bagel thin with hummus, raw tempeh, spinach and honey mustard with some baby carrots on the side.
Snack was three delicious dates stuffed with pb. Mmmmm...
Tonight we are going to Newburyport for dinner and some walking around. I heart Newburyport. I think we're going to a great Mexican restaurant Agave. Yum. I'm going to get a hill walk in at the gym beforehand and then we'll be off gallivanting.
I hope you guys have a great evening! See you tomorrow.
Em

That sounds so fun! I love Newburyport :-)
Glad you had such a great weekend!
My boyfriend lived in Newburyport for a summer doing water testing. We used to go to Agave all the time. It's his favorite restaurant. I hope you enjoy it!
I just got some tempeh yesterday and was thinking of ways to use it- your sandwich sounds yummy so I might try something like that!
