Well hello, friends! Happy Wednesday. What's the good word? I would say today's good word is "blue sky." It is one of those days when there isn't a cloud to be seen and the sky is so bright it almost hurts to look at it. Its lovely! I only wish I could've spent more time outside!
Brian and I got some quality time under the big blue blanket this morning. We dragged ourselves out of bed and hit the streets for a run. We ran about 2.9 miles in 27:30. It was tough, but I'm super glad I got out there.
To refuel, I enjoyed oats in a jar. I couldn't wait to fill this Teddy Peanut Butter with Flaxseed jar up with steamy, dreamy oats. My oats contained half a nanner and a splash of almond milk. So delish.
Lunch was equally delicious - a tempeh and hummus sandwich on a sandwich thin with spinach and honey mustard. I also had some carrot sticks on the side for nostalgia and crunch factor.
Snack was quite the treat - pomegranite Chobani with the other half of my morning nanner. This was sweet, tart, and scrumptious.
Since I have class tonight, I packed leftovers to consume beforehand. I find it prevents my mind from wandering and my stomach from revolting. Luckily, dinner last night was delicious and I can't wait to break into tonight's iteration. Baked tofu (marinated in soy sauce) with sauteed bell pepper and onion, roasted broccoli, couscous and a drizzle of tahini. Yum!
I'm so glad that you guys seem as excited as I am for tomorrow's Challenge. Its going to be super fun. :)
Tell me, what are you looking forward to this afternoon? I'm sure your stories will cheer me up when I get out of my neverending class!

It's been really pretty and sunny here too for awhile now. I never thought I'd say this, but I'm hoping for rain soon. The pollen here is out of control. Everything is covered in yellow and it's finally starting to get to me. Anyway, glad yall had such a great start to the day with a good run!!
Your tempeh sandwich sure does look good. Love that you had carrots sticks for "nostalgia." :)
The only thing going on with me this evening are plans to make a doggie birthday cake!! :) My Ripsey girl is going to be 3 tomorrow!! :)
