Hey there, friends! Happy Tuesday! What’s the good word?
Today has been a good day for me. I had delicious eats, achieved my goal (day 1) of taking a walk away from my desk during the afternoon, and received a kind email from the folks at Stonyfield regarding the mold on yesterday’s yogurt. It was really nice to know that they care about their products – and their customer service.
The day started out with…nanner oats! I bet you never would have guessed. :) I had a spoon of almond butter mixed in. Yum.
I prepped my lunch last night and I’m so glad I did. It was awesome – a one egg and one egg white fritata with sauteed bell pepper, onion, and spinach. I also had a sandwich thin lightly toasted (otherwise they become crackers) and smeared with some margarine. Tasty!
Not too much later, I broke in to this crisp apple.
And then, it was time for my walk! I went and did some mailing and went and used up the last of my gift certificate to the coffee shop. Booo! I got a delicious hot ginger green tea. Tazo tea is quite tasty!
Along with my tea, I had my new favorite snack: wasa with cottage cheese and honey.
I was feeling pretty beat from Tabata Monday so when I got home I just did some easy yoga and called it a day. It felt wonderful to stretch and just take some slow, me time. :)
For dinner, I made a yummy creation with some steamed broccoli slaw, a steamed (and cubed) sweet tater, bbq Tempehtations and some red quinoa. It came out really well, especially with some honey mustard and hot sauce (somehow my new favorite combo!). I also had a bit of hummus on the side to dip. I was skeptical of the bbq tempeh but I really liked it and it was super easy. Definitely a keeper.
Now, its time for me to do some reading for class tomorrow and watch Biggest Loser. I’m thinking a mango smoothie may be in order. :)

Did you put honey mustard on the slaw? I love honey mustard, but never thought to try that.
mm nothing says good morning like banana oats with almond butter!! i love how the banana adds so much sweetness!
