Hey guys, this is attempt number two at posting (I wrote out a whole post but forgot to save or publish!), so I’m afraid its going to be short. I hope that you’re all having good days! Mine was extremely busy with work as well as with school after work so I’m more than beat and in need of chocolate… That will be fixed soon enough, though!
Breakfast was a bowl of oats topped with warm cinnamon apples and cottage cheese – this was so good. The trick for me was peeling the apples and nuking them beforehand with cinnamon and nutmeg.
Lunch was a bowl of vegetable barley soup with a wasa cracker crumbled in as well as a boiled egg for protein. Satisfying and tasty.
Tabata yesterday was brutal (but awesome) so I’m pretty sore today. I just did some fairly easy cardio in the gym – 20 minutes on the elliptical and 20 minutes of brisk walking at an incline on the treadmill.
Dinner was quite yummy – stir fried bell pepper, onion and broccoli with reduced balsamic, garlic and basil sauce along with some white jasmine rice made with peas, a veggie Italian sausage and hummus. It was really good, and there are leftovers for lunch tomorrow. Shweet.
