A New Girl Crush

Hi Friends! Happy Emilyday! In true Emilyday fashion, I could NOT wait for it to get here.  Phew.  This week has been insane! I hope that things will calm down next week as things get a little more back to normal after the holidays.

Today’s breakfast was delicious and satisfying – a piece of whole wheat toast with peanut butter and nanner and a plain Oikos with the other half of the nanner.

And lunch was a delicious tasting plate inspired by one of Heather’s meals earlier in the week – tempeh, blue corn chips, bell pepper strips and hummus.   YUM!

Snack was yummy and different – a boiled egg along with an orange.

I’m not going to lie, I definitely dipped into the almond butter jar before going to the gym.  I always feel like a weirdo sitting there with a spoon of nut butter in my cube.  I already get looks from my oats in a jar and tempeh, so suppose a few more don’t make much difference!

The gym trip was quick and dirty – 30 minutes on the stairclimber with the Harper’s Bizarre featuring Tina Fey on the cover.  Can I just say that she is AMAZING. She looked absolutely beautiful and is so much more than that.  I definitely have a HUGE girl-crush on her (don’t worry Ellen, you’re still in my heart).

After the gym, we made our way home and I prepped dinner while Brian went out for a run.  I cleaned and cut an acorn squash in half put a little smart balance and brown sugar in the middle and placed it in the oven at 450. 

While that was baking, I did some Less is More yoga from Exercise TV and when Brian came home, he asked me to lead him in some balance, hip stretching, and twisting yoga.  It went really well and I was glad to have been able to lead him.  Hopefully it’ll be a regular occurrence – its good for his runner’s mus-kles.

The rest of dinner was thrown together in a flash – sautéed onion, portobello mushroom, and veggie apple sausage topped with spinach.  Our plates were beautious.  I topped my sausage sauté with some honey mustard and hot sauce.  It was really, really good.  The squash came out well, but definitely not as good as my moms.  I’ll have to see what her method is. :)

Tonight we’re having a game night and I ran out to pick up some dessert – chocolate vita-tops along with some ben and jerry’s frozen yogurt and some organic whip (like cool whip).  Yum! Can’t wait.

I loved your lunch tasting plate! I need to pick up some more tempeh. I've only bought it once. Do you heat it up when you eat it like that? I wasn't sure if I could just eat it plain. I think I baked it - it was over a year ago so I can't really even remember.

Hehe, I love Tina Fey too! She's hilarious!! :)

I think I'd faint if Andrew asked me to guide him in some yoga... haha! I'd be so excited though, but uh, don't think that'll be happenin any time soon! ;)

Tina Fey is the bizness. I love her. She's second on my girlcrush list after Madame Clinton. I love Fey (and Lisa Loeb) for making it cool for me to wear glasses.

I hope game night was fun!

I can just see you sitting in a cubicle with that spoon in the nutbutter jar! We're laying low this weekend. With wind chills in the -20 to -30 degree range, I don't really want to leave the house!
