Hey Guys! Happy Tuesday of this, the most thankful of weeks. :) How are you? I’m doing pretty well. Work was a bit slow today – I think all of my writers are gearing up for the holiday – but it was still a good day.
I started out with some pumpkin oats – this was 1/2 cup oats, 1/2 cup milk, 1/2 cup water and about 1/3-1/2 cup organic pumpkin. I added a spoon of pb and some honey to the top. Yum. Delish.
Lunch was more veggie stew leftovers with a piece of pumpkin cornbread, of course (just in case I didn’t get enough pumpkin).
I definitely will be making that stew again. It was so good. The eggplant was especially delicious.
Snack was a plain oikos with nanner.
Once I got home, I couldn’t wait to hit the yoga mat. I was pretty hungry though and so I had half of a kashi TLC trail mix bar. It fueled me through the 45 minute yoga fitness fusion from exercise TV. Its definitely my favorite flow. Such a good mix of toughness and gloriousness. :)
After yoga, I was SO ready for dinner. I made 1/4 cup of couscous (dry – makes about a 1/2 cup cooked?) and stir-fried up some bell pepper, broccoli, spinach and a quorn chick’n cutlet. For an asian inspired sauce, I mixed 1T crunchy almond butter with some hot sauce and boiling water (to make it thinner). It was delicious.
I should probably pack for my parents’ house, but I think I may play some solo Rock Band first. :) I’ve been hankering to play guitar (wii-tar?).
