Fall Fun in Albany

Hey guys! Happy Weekend! I’m writing from Albany at my parents’ house.  I get so nostalgic when the leaves start turning and its just so nice to be here!  Yesterday I got to work super early and started with a yogurt bowl mess…

I ate a semi-early lunch of a whole wheat pita stuffed with hummus, spinach, zucchini and a bit of my homemade honey mustard dressing with a boiled egg on the side for extra protein.  Yummers.

IMG_1186Snack was an apple pie larabar (my first time trying it).  It was good, but not my favorite.  I’ll have to agree with Andrew on this one! :)

The ride here was ridiculously long because of Columbus Day weekend.  It was nice to be driving Brian’s parents’ truck (they let me borrow it to bring our new kitchen table home!) because its an automatic.  My manual would have been brutal!  4.5 hours later (it normally takes 3!), I was finally home.

I gave my mom her birthday gifts (Happy Birthday Mom!) and then we headed off to dinner.  We went to our favorite little Indian restaurant and it did not disappoint!

To start, I ordered the Mulligatawny soup.  It was my first time trying it and it was delicious! Yum.  For my entree, I ordered Baingan Bharta and we shared some amazing onion Naan. It was a great meal!

I woke up lazily this morning (at 9:30!) and had some coffee and a bowl of bran flakes with raisins. 

IMG_1188My mom and I are going to go out and get some exercise soon (she’s going to ride while I run) and then we’re hitting the mall to do some birthday shopping. :)

First of all, I'm very impressed you drive a manual. Andrew drives one too and he's tried to teach me, but I just don't get it.

And Andrew's head is about 10 sizes bigger now that he's made into your blog!! :)

When you have time, will you tell me how you make your honey mustard dressing? I made some last night, actually! But I didn't have any honey, so I mixed plain mustard and agave nectar and it was great. But curious to see if you have a better recipe.

Isn't always so comforting to go back home?? My parents only live about 45 minutes away, but I don't visit nearly enough. When I do go back, especially in the fall, I am overwhelmed with nostalgia and comforting feelings.

I love baigan bharta too!! Anything with eggplant is almost guaranteed to be dreamy. I've never had onion naan before. I bet it's great!
