Hey guys! Happy Saturday! I hope that you’ve enjoyed the start to your weekends. :) We had a good time at the wedding last night – it was at a beautiful museum right on a whole bunch of farm land. It was amazing – and the sun came out just in time for the ceremony. While all of the weddings we went to were a complete blast, we’re definitely happy to be done for a while. Its tiring, for sure!
This morning, Brian left the hotel around 7:30 (we stayed out in Western Mass because of Brian’s nearby tournament today). I slept a bit longer and left around 8:45. I waited to eat until I got home and made a delicious bowl of oats with 1/2 cup oats, 1/2 cup milk, 1/2 cup water, a frozen nanner (it was getting too brown) and some blueberries and barney butter stirred in at the end. Delicious!
After breakfast, I read some blogs and then I got to work on my thesis. We have to have our literature review chapter done by October 14. This chapter of our final thesis needs to be 20-25 pages long and consist entirely of the research that we completed (none of our own words). Its proving super difficult for me – the going is pretty slow. I’m going to keep trucking though! Phew, sorry for the diversion.
Anywho, I worked until about 1:30 and then got to making some lunch. I was craving another tofu scramble so that’s what I had – this bad boy contained 1/4 block tofu, onion, bell pepper, curry powder, an egg and egg white, and some spinach. I also had a slice of bread with some smart balance and garlic powder. Mmmm….
While digesting, I did a bit of cleaning around the house and then got dressed for a run. I felt pretty good and did 40 minutes around the lake. It was such a beautiful day!
When I got back, I showered and made a snack – fage with a bit more of my kashi blueberry clusters sample. So yummy.
Around 4:30, I got back to work and kept at it until Brian got home at 6:30. I promised my self that once he got back, I would call it a day and I definitely followed through!
While Brian showered, I got dinner ready. I decided on pierogis (we had a bag of potato onion in the freezer) with sauteed bell pepper, onion, garlic, broccoli, peas and veggie italian “sausage.” It was really, really good – especially with some parm and hot sauce sprinkled on top.
Now, I think we’re going to watch a movie. We’re both super tired. Tomorrow Brian’s off to day two of the tournament (they’re looking really good, yeehaw!) and I’m going to go to yoga at 10:30 and then right to the library at school to do some more work – it’ll be nice not to be such a homebody! :)
I hope you guys have a great night!
Em

So glad to hear you had another great wedding! Have you ever heard of Sunderland, MA? My aunt used to live there. I visited her a few times and loved it there!! She lived near the Yankee Candle place. We ate at a lot of amazing places. I really want to go back up there someday... maybe in the fall sometime to see the pretty leaves!
Your oats looks so pretty with the blueberries!
Way to go Brian! Hope he does well tomorrow!! And I hope YOU have fun at yoga tomorrow!!
Goodnight Em! :)
A 25 page thesis?? Holy cow that's rough! It sounds like your moving right along with it though!
Your oats are such a pretty color!
Enjoy your sunday!
