Hey lovelies! How are you? I hope you all had great Wednesdays! I had amazing amounts of energy today - I was like a Mexican jumping bean (not necessarily a good thing in a cube situation). I managed to avoid distracting everyone though so that was good. :)
I started the day off with a smiley plate of goodness. Whole wheat english muffin with sunbutter, a few raisins and a nanner, of course.
Lunch was a salad with the veggies I so missed yesterday. It had mixed greens, bell pepper, cuc, 1/2 an avocado and Newman's Own sundried tomato dressing.
I pretty much hit the jackpot today because someone brought in a whole bunch of sabra individual samples. So awesome. :) I had one with some of my amazing tortilla chips.
Snack was some plain chobani with a nectarine. The nectarine wasn't as ripe as I'd like but it was still really tasty.
I was getting pretty hungry towards the end of work and so I had a small container of golean. It always reminds me of cracker jacks.
When I got home, my roommate was heading out for a run so I joined her. We did a trail run that is quite hilly but it was fun. We were out for 33:41. When we got back it was so hot that we decided to go in the lake. We ended up swimming out and around the buoys - about a quarter mile I think. It was great.
After our swim, and a quick shower, I was definitely ready for dinner. I decided to use fresh broccoli, tomatoes, garlic and 1/4 block of tempeh to make an italian stir fry. After letting everything heat up and brown a bit, I added some red wine vinegar, basil, garlic salt, and red pepper flake and let it reduce. For some carbs, I reheated a sweet potato that I baked last night and mashed it in the bottom of a bowl. Topped with my veggies and tempeh and some parm and voila - a delicious dinner. I definitely liked this and will be making it again.
Dessert consisted of three 85% cocoa dark chocolate lindt squares and a mini-bag of Newman's Own popcorn. Yum.
I got a ton of work done tonight for my thesis which is very exciting. Yay for that! :) Now I'm going to relax and get ready for bed. Have a great night my friends.
