Wedding Weekend

Hey guys! Happy Saturday! What is everyone up to? Brian and I have a wedding to go to this afternoon in Portsmouth, NH. We were going to drive there via boat, but the weather nixed that, so we'll be taking the normal four wheeled route.

Yesterday my eats were pretty boring - so I'll spare you the details and skip right to post-work activities. I started by going out for an easy four mile run. My legs felt a bit tired, but it was great to get out there.

Once I got home, I started prepping dinner for Brian and I. I chopped a sweet potato, a block of super firm tofu, half a red bell pepper and a big head of broccoli, put it all in a big zip lock and covered it with low sodium soy sauce, garlic, black pepper and red pepper flake. I mixed it all around (shake 'n bake style) and then placed it on an oiled baking sheet. Into the oven it went for about 40 minutes at 325.

While the goodness was baking, I did some yoga and Brian went for a swim. It was lovely.

I think that baking tofu, broccoli, sweet potatoes and peppers like this is my favorite way to have all of these ingredients. Its so good! The tofu comes out super crispy (as does the broccoli) and the sweet potatoes are delicious with the contrast of the soy sauce. So good. We had some brown rice topped with chili sauce on the side.


We were feeling quite summery and so decided to go out for some ice cream. I got a kiddie dish of black raspberry chocolate chip yogurt with chocolate sprinkles. It was great.


Some whale wars thus ensued (so good - do any of you watch the show? Its on Animal Planet and Brian and I are pretty much obsessed) and then it was time for bed.

This morning, we're kind of hurrying to get going so that we can get workouts in before having to leave for the wedding. I had an easy but delicious breakfast of a lavash bread rolled up with crunchy pb and raisins and a coffee on the side.


I better run now - the Shred and some dishes are calling my name. I'm going to be good about taking pictures at the wedding, so stay tuned for some pictures. :)

Have fun at the wedding! <--too bad you couldn't take the boat :( Jason likes to watch whale wars on TV, it's an interesting show for sure! Okay, that's it. Im getting some ice cream today, darn it!
