Anywho, back to the present...this morning I woke up starving and so I couldn't wait to make a big bowl of satisfying oats. Prepared the same as usual - with 1/2 cup oats, 1/2 cup water, 1/2 cup milk and topped with almond butter and nanner. Awesomeness in a bowl, I tell ya! I also had a lovely iced coffee.

Lunch today was a yummy combo of pretzels, spinach and artichoke hummus, braeburn apple, and a cheese stick. Tasty!

Snack today consisted of a bowl of deliciousness - go lean crunch topped with a plain chobani topped with some organic granola.

I couldn't decide what I wanted to do after work - run? spin bike? arc trainer? I usually know what I want to do, and if I don't, its a good sign that I might want to do something different or take a day off from exercise all together. Amazing how that works, huh? :)
I decided to head to the grocery store and play it by ear once I got home. After picking up some essentials for the week, I decided to roast a big tray of veggies, tofu and sweet potatoes. I first chopped everything up, peeled and nuked the sweet potato a bit, diced some garlic, and then placed it all in a ziplock to slosh around with some light sodium soy sauce.
Once everything was thoroughly coated, I placed the broccoli, bell pepper, sweet potato, tofu and garlic on a cookie sheet greased with olive oil. I put the tray in a 350 degree oven and then had some quality time with Rodney - his good ole 25 minute strength yoga session. Awesomeness.
By the time I was finished, the veggies and tofu were perfectly roasted and delicious with the light soy sauce and garlic covering them in tastiness.I quickly made 1/2 cup of instant brown rice, spooned it over some fresh spinach and topped it with some of the tofu veggie mixture. Then, came the coup de grace - chili hot sauce. It came out really good and was really low maintenance. It was awesome to leave it in the oven, do some yoga, and return to an awesome meal. I even have leftovers for lunch tomorrow!

After dinner, my roommate was going out for a paddle in her kayak so I joined her. It was great. We were out for at least 45 minutes until we had to come in due to darkness. I really enjoyed it and was happy to get some more exercise. I feel great and am happy that instead of forcing myself to run or go to the gym when I really wasn't into it, I let what would happen happen and got to do some awesome yoga and had a great kayak trip. Yay for that! :)
Once I got back, I was more than ready for dessert - rice pudding with cinnamon and two dark chocolate squares. I'm currently enjoying some tea as well. Now its time to relax so I can get all snuggly in bed fairly early. :)

Those spur-the-moment exercises are the best! Thats so cool that he has a frisbee tournament in New York! Do you guys play a lot?
Brian is an ultimate frisbee player and I'm just a spectator. :) He actually broke his leg pretty seriously playing last summer, so he hasn't played yet this season. He still is active as a team captain and so goes to the games and tournaments.
