Today I started off with my tried and true yummy oats - 1/2 cup oats, 1/2 cup low fat milk, 1/2 cup water, banana and white chocolate pb. I used the last of my wc pb today and even though I'm a bit sad, I feel like I enjoy the less sweet nut butters better these days. I also had an iced coffee, of course.

Lunch was half of a can of bean and corn soup with some kashi crackers and cheddar cheese. Yum. :)

For a snack, I had a new-to-me cherry pomegranite Nectar bar. I really liked it - it has less fat and calories than a luna bar, but tastes very similar. I enjoyed the tartness of it - and that it was all natural. I also enjoyed a mug of regular tea with some low fat milk.

After work today, I decided it would do my sore legs some good to do some sort of loosening workout. I decided on the elliptical and it was a good choice - it didn't hurt and actually stretched out my sore muscles. I did 35 minutes on the elliptical followed by some pretty intense ab and arm exercises. I didn't stop sweating after the elliptical which is always a good sign. I did two rounds of:
20 sit ups on the stability ball with a ten pound medicine ball
16 push-ups on the balance ball (8 for each arm on the balance ball)
15 pilates-style roll ups with the stability ball over my head
6 sets each of bicep curls and shoulder raises with 10 lb free weights
20 crossed leg crunches
4 sets each of arm raises, 'shoulder pumps' and flies with 10 lb free weights
After my workout, I hit up the grocery store to pick up some staples and veggies. I couldn't wait to eat dinner and quickly got to preparing it (and some salads for lunches) once I got home. I definitely followed the Carrots 'n Cake method of chopping all my veggies for easy use - such a great idea! :)
For dinner, I had a whole wheat wrap with sabra olive hummus, a couple slices of raw tempeh, orange bell pepper, and mixed lettuce along with a baked sweet potato. It was awesomely delicious.


Dessert was equally yummy - some rice pudding with cinnamon and all natural trail mix featuring cranberries, dates, sunflower seeds, roasted soy beans, pepitas, and raisins. So tasty.

I got a good amount of reading for school done, but I still have some work to do. I'm sorry for the delay in Saturday details and pictures - I've been so busy! I will say that it was another awesome hike and quite an adventure. I can't wait to post pictures and tell you about it. :)
