Nerves

I've been pretty anxious all day today even though it should have been a relaxing snow day! I just feel like there is so much to do before we leave for Costa Rica on Friday. Some finishing touches to our final paper for class, a presentation in class on Wednesday, laundry, packing, errands, etc. Yikes! I'm also really nervous about going to Costa Rica in general. I KNOW it will be awesome and it must seem ridiculous to you that I'm even worried about it - but, it is my first time out of the country. Brian is an extensive traveler as are our friends who are joining us so I know I don't need to worry. Phew!

This afternoon Brian and I pretty much hung out at his parents' house and let ourselves be snowed in. Around 11:30, I had a small slice of some homemade hobo bread - it had raisins, dates, and walnuts in it. Delicious!


Then I decided I'd better get up off of the chair! I used Brian's mother's treadmill (they have a nice little basement gym) and ran 3 miles in about 25 minutes. I was taking it super easy today. After that, I did the 20 minute strength & flexibility yoga session with my pal Rodney Yee. This is such an intense workout (especially after running) but I love it! The fluid and quick movements are great, and there are even some tricky balancing poses that I'm proud to find I can actually do! :)

After yoga, it was definitely time for some lunch. I had a bowl of V8 tomato and herb soup along with some organic whole grain crackers with roasted veggie hummus. It was quite yummy. I also had a cup of black tea with a bit of low fat milk.


We decided around 4:30 that it was time to hit the road. I was antsy to get home and pack/do school work and Brian wanted to do the same (minus the school work). When I got home, I was happy to find the driveway plowed, but since none of my roommates have been around, there was about a foot of snow to walk through to get to the door. I grabbed some huge boots and a shovel and cleared a path (the snow was quite heavy this time around). I was starving again after this and since I'm honoring my hunger for lent, I decided to make myself a bowl of plain instant oats with some golden raisins and a bit of all natural peanut butter I added a sprinkle of cinnamon as well. It warmed me up and quenched my hunger, big time!


I pulled out a half a block of frozen tofu, but I haven't decided what I'm going to do with it yet. I'm thinking I might bake it and let it get all crispy and delish. Yum.

In the meantime, I've packed and now I'm working on the works cited list for our final paper (well I'm taking a break obviously, but I have a good start on it!). Having packed up some of my stuff definitely makes me feel better. Do you guys have any advice for quelling pre-travel nerves??

Dinner and Dessert

I managed to get a good amount of work done on the paper tonight which was great. I also made quite a tasty dinner. I used the half a block of defrosted tofu, cut into slices and slathered with peanut sauce and placed it in the oven at 375 for about 20 minutes. The once frozen tofu was great because it was so much easier to press the water out of. It turned out super crispy and delicious - the peanut sauce created an awesome coating on the tofu.

I made some whole wheat rotini and defrosted some spinach, peas and broccoli to have along with the tofu. Once the pasta and veggies were done, I tossed them with a bit more peanut sauce and some sprouts. It was awesome. :)


Dessert consisted of two chai sugar cookies which my roommate made. They were delicious and contained actual pieces of chai tea that gave them a little bit of a spicy kick. They were lightly frosted and oh so good. I also had a huge mug of sugar cookie tea.

Rodney Yee is really great! I'm so lucky to have stumbled upon him as my first yoga experience. I love the meditation at the end, so relaxing! :)
