Long Day

Its been a super long day today and I'm kind of bumming about some news I got this afternoon. Everything's fine, but my living situation may be changing and its just adding some extra stress to this crazy back from vacation week. Blargh. Sorry if this is a super short post.

Breakfast was an old standby - oats with banana and chocolate pb. Such a favorite. I also had a small vanilla coffee with low fat milk and splenda (oh how I miss Costa Rican coffee!).


I went to the gym during lunch and got a good workout in - 30 minutes on the stairclimber (level 9, aerobic routine) followed by an intense ab/arm session using the exercise ball and 10 pound weights. I probably did 15 minutes of strength exercises and then called it a day.

Lunch was my chick pea and avocado mash on toasted nine grain bread and an apple. I was inspired by Kath to try this sandwich and it was really really tasty. I mashed up chick peas with a small amount of olive oil and the juice of half a lemon and added the avocado, black pepper, garlic powder and a bit of cumin. It was quite tasty along side my favorite apple of all time - Pink Lady.


This afternoon was another crazy busy one so it flew by. I had a vanilla chobani around 3:30.


Before class, I made myself a sandwich to bring along - egg and cheese with tomato on 9 grain bread. I also packed some baby carrots and a kashi chocolate almond Go Lean bar.


I'm always hungry when I get back from class and I usually crave veggies, so thats what I had! I nuked a sweet potato and some frozen broccoli and voila, the perfect after class snack. The sweet potato was absolutely delicious, just like last nights. I even put a little bit of my CR salsa on my broccoli. Yum.


Alright, well I'm super beat and need some sleep and to hopefully calm myself down a bit. Hope you guys had a better day! Tomorrow is Thursday, yay for that.
