Lazy Sunday

Have you guys seen the SNL skit called Lazy Sunday? Its pretty hilarious. I had a lovely lazy Sunday with my family. Probably my favorite part of being home is the slow start of our days on Sunday. We all sit in the living room with the paper or a book or laptop. It wasn't until 12:30 that I got myself ready to do some yoga. (In my defense, though, I did finish some homework during our living room time.)

Before yoga, I was kind of hungry so I had a nanner sandwich with PB. I definitely wouldn't have gotten through the tough hour session without it.

After yoga, I got ready and went to Lowe's with my mom - my parents are redoing their bathroom and she needed to buy faucets. Fun fun, I know, but Target is right next door and so we got to go in afterward. I got a few really cute shirts that were all on sale. It was lovely. We were out for a while so it was a good thing that I grabbed a whole wheat pita stuffed with some hummus and red pepper to keep me going. :)

When we got back from the store I started getting all of my stuff together and then had an early dinner - leftover lasagna. So yummy. This looks like a huge portion, but it was on a small sandwich plate.

The drive was a piece of cake last night! It definitely helps to go right to Brian's place (in the city) as opposed to my place all the way up north. I snacked on some chocolate teddy grahams mixed with raisins along the way.

Once I got to Brian's I found him in the kitchen attempting to make plaintains for our dessert. He's been on a mission to make them since before we even went to Costa Rica. Unfortunately, they did not come out very well. We were both really surprised to find that they tasted just like potatoes - potatoes dipped in a bit of molasses. Do you guys ever make plaintains? Any suggestions for cooking methods? Brian cut them into small pieces and then browned them in a pan with a bit of oil. They were just too tough and potato-y. We would love your suggestions!

Needless to say, the plaintains were scrapped and we just enjoyed some tea instead. I had earl grey with some skim milk and called it a night.

Hope you guys have a great week!

Em

I love Target! I can always find something cute there and love that I don't have to spend a ton.

Most of my favorite earrings that I get the most compliments on are from Target!!

I know, its such a dangerous store to go into because I always end up with way more than I went in for. :)
